SUSHI ROKU’S RECENTLY APPOINTED CORPORATE EXECUTIVE CHEF TYSON WONG UNCOVERS NEW UNI OFFERINGS FOR MARCH ($5-30)

The contemporary Japanese restaurant partners with Ocean Queen, an organic Santa Barbara sea urchin purveyor, to debut new uni-inspired dishes: Blue Crab Tartare and Uni Udon

WHAT:                          This March, Sushi Roku’s Corporate Executive Chef Tyson Wong (a former “Iron Chef” alum) debuts new uni-inspired dishes ($5-30) at the Hollywood, Santa Monica, and Pasadena restaurants, in addition to unveiling new seasonal offerings. The uni—the Japanese term for sea urchin roe—is sourced from Ocean Queen, a 41 year-old family run business based out of Santa Barbara, where the confluence of warm and cold waters off the Channel Islands makes the area an ideal location to dive and harvest the delicacy. Chef Wong showcases the buttery, sweet, and briny ingredient in the Blue Crab Tartare with caviar appetizer and Japanese style Uni Udon entrée. In addition to the two specialties, Chef Wong debuts “Garden, Sea, and Farm” plates featuring produce from the Santa Monica and Hollywood farmers’ market, including:

  • Tuna & Beet Carpaccio with goat cheese and yuzu miso
  • Spicy Tuna Spring Roll with popcorn shrimp, avocado, jalapeno, cilantro, and chili sauce
  • Grilled Octopus with garlic, sea salt, and oIive oil
  • Spicy Pork Belly "Kakuni" Fried Rice
  • Aji Crudo with Jack mackerel, ginger relish, and Aji amarillo sauce
  • Braised Short Ribs with garlic, ginger, and five spice

 

WHEN:                         Sushi Roku is open for lunch Monday – Sunday (with the exception of Sushi Roku Hollywood, which is not open for lunch on Sunday), and dinner daily
